Kale was in the box this week. I had no idea what to do with kale. I found a recipe for some white bean and kale soup. Since were having the coolest July on record (which I don’t mind), I had no problem making more soup.
This one was particularly yummy. Really…really good. I’d be doing this one again this fall. Instead of using tomatoes, I used some paste and that worked out really well.
That looks delicious! I planted kale but most of the seed got rained out so I have just a few wimpy ones. The farmers market will have to rescue me there.
