I made this yummy veggie quesadilla’s tonight and it’s a total hit. I used a pat of butter instead of the spray. My pans are anti-spray. However, I did spray the quesadilla’s before I put them in the oven. I left out the corn and added in black beans instead. I also added in a red bell pepper and cilantro.
This recipe is definitely a keeper. Yum.
Once the boy is off at college we’ll be having the veggie version a lot more often. I love these for a quick fix dinner. Yours look delicious!
